Moving the the stock ones around makes them uneven and I am not ready for blank on Coleman just yet.

Iād go with a flat/uniform profile cap like KAM, XDA, DSA, etc.. That way you can rearrange all the caps without worrying about row heights. Yuzu has KAM profile caps, and FK Custom has XDA. And of course, you can customize the legends with them.
They have templates for both the UHK60 and 80.
I type on Colemak and designed myself some keycaps on Yuzu. IIRC, you can just select default legends for Colemak. Or you can go fancy and really creative with colours and legends. I went with Cherry profile keycaps; I really like the slight bend between rows; I find that makes typing a bit more comfortable.
